The twenty-five-year-old vineyards are planted on south facing slopes at an altitude of 300-350 metres, on calcarous-clay soils. The grapes are meticulously harvested by hand at the end of September.
After crushing, the juice from the first pressing is fermented using yeasts in temperature controlled cement vats. The wine is then aged for a further eight months in cement with a final two months in bottle before release.
A burst of flavour, white flowers, crisp green apples and baked pear. Beautiful rich, round texture and freshness.
